Air-frying requires a fraction of the oil to achieve a similar taste and texture to deep-fried foods that require lots of oil to fry in.
I had heard how delicious deep fried tacos were and wanted to try them.
Well, that wasn't happening when I saw the fat content and eating healthier starting off my New Year.
Since chimichangas are usually deep fried and are one of my favorite Mexican foods, this recipe did the trick on my craving for them.
I have always baked my chimichangas until now, these taste great air fried.
I decided to experiment with a low carb version and the family approved and loved them.
My son bought me this air fryer for Mother's Day and I never tried it until now, I had no idea what I was missing out on.
I wanted to make something healthy.
I happened to love fried tacos which are really a chimichanga, and now I needed an alternative since going to a low-fat diet.
Of course, you can substitute all the ingredients for full fat and deep fry these in oil if you prefer.
Of course, the filling is fattening, but one slice of cheese can be omitted if you want a lower fat taco.
My favorite part is all that cheese that oozes out of the taco.
I love the refried beans with chicken, you can also substitute shaved sirloin steak or even lean hamburger.
Whichever you prefer, just make sure you saute the meat until it's fairly cooked through.
The rest will be cooked in the air fryer.
The chicken comes out juicy and tender and very flavorful.
You can also just use cooked rice and beans.
You can do any of the meats in an air fryer also, I just chose to make the filling ahead of time and saute it.
No oil used just spray your pan with cooking oil.
I didn't use the air fryer for the meat, because I was too lazy to clean it to fry the tacos in!
You just need to stir in the beans after you saute the chicken, they don't need to be cooked.
Just stir to be well blended with flavors.
I used just regular low carb flour tortilla.
They have so many flavors to choose from, pick one you like the best.
Remember this is just a guideline to follow, you can change them up any way you like.
Don't overstuff these.
They are a little tricky to fold up the sides but layering with small amounts works.
You will see on the second one I made in the video I had a little trouble and overstuffed it which makes them harder to fold.
Remember seam side down so they don't ooze out while cooking.
Well, I wasn't sold on air fried foods in the beginning when I first got this.
I just gave up fried foods and thought I didn't want to bother compromising taste, but I didn't have too!
If you don't use the parchment paper, make sure you oil spray the compartment so nothing sticks.
I really love my air fryer now and perfect for reheating the baked chicken, baked leftover meats and everything tastes great.
It's really awesome for not only reheating and it makes great zucchini and cauliflower air fried also.
Since I stopped eating fried foods because of the calories and fat, I love my air fryer.

TIPS
- Spray your air fryer with cooking oil so they don't stick and the tops of the flour tortilla for crispness.
- Warm the tortilla slightly, they are easier to roll up.
- Line the Air Fryer with parchment paper for easier cleanup!
- The last tip I have, be careful the filling is hot hot hot!

Air Fried Tacos
prep time: 15 mins cook time: 15 mins total time: 30 mins
These are a flour-filled tortilla rolled up and fried in the Air Fryer for a healthy version of a fried taco!
ingredients:
1 package of flour tortilla low carb or regular
1 can fat-free refried beans
2 large cooked boneless chicken breasts cut into small bite-sized pieces or use any meat you like cooked on top of the stove or in the air fryer
romaine lettuce cut up or shredded
grape tomatoes cut into halves
1 tablespoon chili powder
1 teaspoon granulated garlic powder
1 teaspoon cumin
1 teaspoon oregano
salt, pepper to taste
chopped parsley or cilantro
a thickly sliced cheese or any kind that for melting cheese like Mozzarella, Swiss, Havarti cheeses
Optional:
taco sauce or hot sauce
cooking oil spray
Cooked rice instead of meat

Air Fryer Appliance for cooking
instructions:
In a large oil-sprayed fry pan (or use your air fryer), saute the chicken cut up with the spices. When chicken is browned on both sides, stir in the refried beans. Turn off the stove and cool the mixture.
Lay out the tortilla on a flat board, add cheese slice, a tablespoon or more depending on the tortilla size of filling mixture, lettuce, and tomato.
Roll up folding sides in and seam down on the plate.
These are ready to fry.
Spray with cooking spray oil
Turn the air fryer to 400 degrees or the highest setting.
Place the taco in the air fryer seam side down.
Spray with tops with cooking spray oil and air fry until golden brown.
The filling is very hot, cool for a few minutes before eating.
Serve with taco sauce or hot sauce and chopped parsley for garnish.
