An Italian Christmas Morning with Homemade Italian Sausage and Eggs
A festive Italian Breakfast with the family every year on Christmas morning. The reason for the season is remembered sharing the morning Christ was born with your family and loved ones. A glorious birthday celebration, is enjoyed by many families and friends. My very favorite day of all. The meaning sometimes is truly forgotten of how this wonderous day came about, and celebrated by Catholic families around the world.
Christmas or Christmas Day is an annual holiday, celebrated on December 25, that commemorates the birth of Jesus of Nazareth. The date of commemoration is not known to be Jesus's actual birthday, and may have initially been chosen to correspond with either the day exactly nine months after some early Christians believed Jesus had been conceived, a historical Roman festival, or the winter solstice. Christmas is central to the Christmas and holiday season, and in Christianity marks the beginning of the larger season of Christmastide, which lasts twelve days.
Although a Christian holiday, Christmas is widely celebrated by many non-origins. Popular modern customs of the holiday include gift-giving, music, an exchange of greeting cards, church celebrations, a special meal, and the display of various decorations including a decorated Christmas tree, twinkling lights, garland, mistletoe, nativity scenes, and holly. In addition, Father Christmas (known as Santa Claus in some areas, including North America, Australia and Ireland) is a popular mythological figure in many countries, associated with the bringing of gifts for children.

One of our favorites meals is breakfast. Normally my two grown sons Chad and Curt, come to spend the night on Christmas Eve, and when we get up the next morning on Christmas Day everyone has a different breakfast food they love to make. All of us have some of this Italian Sausage ( homemade sausage recipe at the end of this post), Peppers and Scrambled Eggs. Along with that Chad will make some Baked French Toast ( http://pegasuslegend-whatscookin.blogspot.com/
2009/05/baked-french-toast.html ) Curt will get the eggs scrambled and my husband Nemo and I will get the coffee on, relax and watch our two babies Katrina and Fonzo play with their new toys. I love this family day.
I really hate that it is still so dark when we get up at 6am... but the lights make it much better as we leave them on all night.

Neither one was too happy to be dressed for the occassion, but before they open their presents they both have to be dressed appropriately.....

1/2 Cup White Wine
1/2 Cup Red Pepper Flakes this will make a medium hot sausage
you can make herb flavored by adding minced garlic, parsley, oregano and basil, usually a 1/4 cup of each to taste.
Prepare the hog casings the day before by soaking in water with a little orange juice and salt. Before using, rinse well and cut into pieces 18"- 2' long. Keep the casings in warm water to keep them soft and flexible. You will need a funnel tube and stuff by hand or buy attachment for your industrial mixer sausage attachment.)
Mix all the ingredients together, usually we mix by hand, until well combined with seasonings. Put casing on the funnel or machine and stuff. We usually freeze most the links and you can use this making many other Italian recipes)
