Salted Peanut Brittle Recipe
Here is the easiest peanut brittle I have ever made.
This was my mom's recipe and Dad's favorite.
I really didn't know how this would come out using regular roasted salted peanuts but to my surprise this was perfect, I would never use raw peanuts again.
I love the way these roasted salted peanuts tasted with the brittle, and sweet and salty combination was so much better than I remembered!
The best part of this recipe is you can use any kinds of nuts you like!
I have also used almonds, mixed nuts, cashews, and pistachios!
They all make a delicious buttery, brittle and perfect for gift giving!

A candy thermometer is a must-have.
Just follow the degrees and this will come out perfectly.
After it cools, break the peanut brittle up and place in the tin or parchment paper-lined plastic container.
This is a very easy fail-proof recipe, however, you have to pay attention at the temperature.
The candy is perfect when it reaches 300 degrees on the thermometer.
It's a very hot mixture, so be careful when pouring onto a butter cookie sheet or parchment paper lined.
Let this cool completely.
You can break this easily after it's cooled.
I like all different sized pieces and shapes.
You can decide to break it up with your hands or use a rubber mallet to smash it.
If you do use the mallet put it in a plastic heavy-duty bag over the brittle first to prevent it flying.
Don't over add and make sure to measure everything out exactly.
The crack stage is important and the temperature for this to be perfect.
The brittle comes out great with these three that are my favorite, almonds, macadamia nuts, and pistachios.
You can try others, just be sure to use two cups of nuts.
You can also drizzle good grade chocolate melted on top then with sprinkles that are colorful.
This can be made with non-salted or salted nuts.
I love the salt version, and the buttery coating is so delicious you will want to make two batches of the salted peanut brittle it goes fast!
It also makes great gifts around the Christmas Holiday.
Store in an airtight tin.

Salted Peanut Brittle
prep time: 15 minscook time: 40 minstotal time: 55 mins
This is a buttery candy made with butter and sugar with roasted salted peanuts or un-salted whichever you like
ingredients:
1 cup sugar
1/4 water
1/2 cup corn syrup (white)
1 teaspoon baking soda
2 tablespoons butter
1 teaspoon pure vanilla
2 cups salted roasted peanuts (however you can use raw peanuts if you do then add around 1/4 teaspoon salt in with the sugar stage of this recipe and before adding the raw peanuts.)
Get all ingredients and cookie sheet prepared ahead of time.
instructions:
Using a heavy-duty saucepan (nonstick) and a wooden spoon for stirring, add in corn syrup, sugar, and water. Use the low setting on your stove. Mine is number 2. Put a candy thermometer in place and keep stirring until this syrup reaches 250 degrees. Add the peanuts and continue stirring until the thermometer reads 300 degrees. Take off heat, add the butter, baking soda and vanilla until blended. Pour onto a parchment lined cookie sheet spreading out as thin as possible.
Cool completely. Break apart and place in a tin or glass jar covered tightly. Seriously delicious recipe and easier than I ever thought it could be!
NOTES:
Make sure you follow the candy thermometer cooking times perfectly. You will need to have a pan that the candy thermometer reaches to the bubbling mixture accurately.
Also, use a non-stick pan for cooking in and parchment paper to cool the brittle on.
