Leftover Turkey Pot Pie Recipe
I just love using all the leftovers from our Turkey dinner for a pot pie. Check it out how easy this is and everyone goes nuts over it. It is so darn easy! You can feed many with this oversized Pot Pie! Whether the Holiday has chicken, beef or turkey, this is the tastiest way to make those leftovers into another fabulous meal that everyone loves.
Comfort food is always defined as the stick to your ribs and fill me up food right? I laugh when I think of a heavy meal in the winter time that really hits the spot, they are always the best meals when it's a chilly day.
Mom would make lots of pots pies since it was a no waster household we grew up in and these were the best memories. I didn't always make them homemade until I figured out how darn easy they were!
Individual or For One Person!

One of our favorite frozen food we use to buy when I was in college was pot pies.
They were easy to throw in the toaster oven we had and a fast meal.

The Pie Itself
Although I use most of what's leftover, I usually take a few whole potatoes and stick them in the microwave until they are soft.
Then I cube them up.
We usually have mashed potatoes for Thanksgiving, they won't work in a pot pie and we love potatoes in ours!
Other Additions
I also love mushrooms, carrots, and peas.
My husband loves the mushrooms, broccoli, and corn.
Change it up to however you like it.
This is just a basic recipe and anything goes in it, venison, beef, chicken and even pork!!

Homemade or Store Bought?
Mom always used homemade pie crust, but in a pinch, you can just use store-bought.
Either the frozen two crust pastry dough or refrigerated rolls of dough you find in the supermarket work fine.
I usually make my own pies for Thanksgiving and make that extra batch of dough just to make pot pies after Thanksgiving.

Turkey freezes well in packages, so if you have a lot of turkey left, freeze around 2 cups cubed in freezer bags ready to go for your pot pies all winter long!

Leftover Turkey Pot Pie Recipe
prep time: 15 min cook time: 35 min total time: 50 mins
This is a great recipe for using up those leftovers from the Holiday. Turkey, Chicken, Beef, anything you have goes into this pastry crust, baked and a delicious new meal!
ingredients:
2 cups or more chopped leftover Turkey
leftover, corn, peas, carrots or all three combined around a cup
2 potatoes cubed and boiled or microwaved
2 cups leftover turkey gravy or use 1 can cream of chicken soup
pie crust store bought top and bottom crust or my recipe homemade
1/4 cup white wine ( I use pinot grigio
salt, pepper to taste
granulated garlic
Butter

use at least a 3-inch deep baking dish

Other options: (you can use leftover boneless beef, roasted boneless chicken or even shrimp) mushrooms, cooked broccoli, green cut beans, use chicken, turkey or beef gravy depending what kind of meat you use. I use Alfredo sauce for the shrimp.
instructions:
Oil spray your baking dish. In a large square or deep dish glass pan to fit store-bought pie crust, or homemade, line the bottom with dough. Add the turkey cooked potatoes, carrots, peas and or corn. Pour the soup or gravy with wine mixed in over on top. Sprinkle with granulated garlic, salt, pepper. Top with second crust. Dot with butter.
Crimp edges of dough with using fork tines. Bake at 400-degree hot oven until crust is golden brown.
