Leftover Slow cooker Chili Salad

Whenever I make a huge amount of Guinness chili, I always have to come up with new ideas for leftovers.

Here is a delicious way to get them to eat salad. Layers of meat with lots of crushed tortilla chips.

Leftover slow cooker chili salad is the way to use up chili with a new meal.

I love repurposing leftovers.


I am also not a huge fan of them over and over the same way.


When I make a pot of chili, I use it up on nachos, salads, inside tortilla shells for taco and I love to make a whole new meal of chili.


Here is a recipe of my favorite salad that you can build with all kinds of vegetables and make it a whole meal!







Easy Recipe


1 cup of Chili (leftover)

Leftover Guinness Chili here's my recipe


Sour Cream

Shredded Cheddar Cheese

Tortilla Chips crushed

Shredded lettuce or cut up

Chopped tomatoes

Chopped jalapeno peppers

Options: sliced olives, chopped bells pepper or chilies, refried canned beans warmed up, taco sauce, queso, chopped fresh spinach, avocado, corn, black beans, chopped cucumber, minced onions, chopped celery, avocado dressing, Italian dressing, or taco sauce

Grab a bowl. Start with a (little of each) meat, cheese, tortilla, lettuce, sour cream, tomatoes, peppers, repeat, and any other options mentioned above. Add as much as you like. Enjoy!
