Baked Homemade Cavatelli
Cavatelli pasta is a little homemade pasta shaped like a hotdog bun and usually served with tomato sauce or with a garlic and oil broccoli combination.
They are made by rolling the shape of a stick dough with three fingers of one hand, instead of with a single finger as done for the common Cavatelli. These are usually served as a first course on Palm Sunday and their shape similar to that of a tree leaf and like that of palm branches.
These are a favorite homemade pasta in our home. We do make them from scratch and homemade with tomato sauce baked and smothered with mozzarella cheese.
This is a traditionally baked cavatelli with cheese. You can also make a meat version for meat lovers also and layer this like a lasagna without Ricotta or with it.
One thing I like to do at the end is broiling the top of the cheese to get it crispy.
If you bake it to get it crispy it takes too long and I am not fond of mushy pasta. If you then bake it longer.
The baked cheese is so delicious I can't help but go for seconds.
Make sure it browns, then it done!
There is no such thing as too much cheese.
I love all the melted cheese on top it is just heaven on a plate!
Sometimes beside just mozzarella, we add ricotta cheese, I have added that to the recipe.
If you add crushed meat of any kind, it's kind of like a baked cavatelli lasagna.
The meat sauce is wonderful with cavatelli.
I add crushed meatballs and crushed sausage to my regular sauce recipe.
Bolognese sauce is a hearty meat sauce that goes fantastic with this dish.
You must try cavatelli if you never have had it.
