APAM KENTANG / POTATO STEAM MUFFIN
Apam again, another bloggers favourites - this time is Apam Kentang. For this recipe I used mashed potatoes and coconut milk. Method and process are the same as any other apam. Need to be fermented for a few hours until the mixture risen. The texture is soft and spongy. Sweet and creamy. Perfect tea time menu. This recipe makes 40 apam (if you use the Chinese tea cups). Recipe adapted from Izah Muffin Lovers.
INGREDIENTS
3/4 cup sugar / 3/4 cwn gula pasir
200 ml water / 200 ml air
1 screwpine leave/ 1 helai daun pandan
2 cups rice flour / 2 cwn tepung beras
1 cup mashed potatoes / 1 cwn kentang rebus
3/4 cup flour / 3/4 cwn tpng gandum
pinch of salts / sedikit garam
1 tsp yeast / 1 sk yeast
1 tsp baking powder / 1 sk b.powder
Colouring of your favourite choice./ warna pilihan
250 ml coconut milk / 250 ml santan.
200 ml water / 200 ml air
1 screwpine leave/ 1 helai daun pandan
2 cups rice flour / 2 cwn tepung beras
1 cup mashed potatoes / 1 cwn kentang rebus
3/4 cup flour / 3/4 cwn tpng gandum
pinch of salts / sedikit garam
1 tsp yeast / 1 sk yeast
1 tsp baking powder / 1 sk b.powder

250 ml coconut milk / 250 ml santan.
PREPARATION
- Boiled potatoes and blend with coconut milk. Leave aside./ Kentang rebus di blend bersama dngn santan(biarkan sebentar)
- Boiled water, sugar and screwpine leave./ Masak gula bersama air dan daun pandan.
- In another bowl mixture all the flour mixture with yeast, baking powder and salts / Dlm mangkuk lain, satukan tepung beras, tepung gandum,yeast, b.powder dan garam.
- Combine all ingredients and blend / Satukan semuanya dlm blender dan kisar sebati.
- Ferment for 1 hour / Perap selama 1 jam.
- Grease mold and steam kuih for 15 minutes / Sapu minyak pada bekas kecil2. Kukus dalam bekas kecil2 selama 15 minit.
- Serves with grated coconut /Hidang bersama kelapa parut

Rasanya minggu ini betul-betul MINGGU APAM PATYSKITCHEN, bukan apa ,....dah alang-alang beli yeast tu, untuk elak pembaziran carilah segala resipi apam yang ada dalam blog. Apam Kentang ini juga merupakan apam popular dikalangan blogger. So saya mesti nak cuba. Memang sedap, lemak gitu. Kepada yang selalu frust kalau buat apam yang tak nak senyum, jangan bimbang apam ini seperti apam salju tak perlu senyum, oleh itu apam ini boleh juga dikukus menggunakan loyang, cikgu saya Izah Muffins Lovers pakai loyang , saya ni disebabkan suka bermain dengan warna saya guna acuan kecil-kecil.
