Chicken and Dumplings Italian Style
During the last view years, I have craved comfort foods like chicken and dumplings.
Of course, since I have to cook everything with a little Italian style flair, these were another one of those delicious experiments
Mom never made anything like this dish growing up, everything we had was Italian period, and that's ok!
In the last few years, my kids are grown now, and with future changes and lifestyles, I am learning to cook all kinds of foods.
We got some great news that I am going to be a grandmother, and the craving just happened to be these chicken and dumplings.
Grandma will not disappoint mama and baby, so here is my first stab at making these.
This is a hearty dish everyone loves here in the South.
Even with my little Italian spin on this dish, it was a classic hit.
I was shocked at how delicious this gravy was and creamy over those soft dumpling, a definitely drool-worthy dish that smelled and tasted fabulous!

This is my version of Chicken & Dumplings, it has a secret ingredient, well it's not a secret anymore.
I was very surprised to see on my first try to make this dish, how easy it was.
The dumplings puffed up nicely and the stew part was so flavorful!
I also have another secret that won't be after today (besides wishing Jennifer a very Happy Birthday.
She made an announcement to the family that she and my son Curt are expecting their first baby together and the soon to be parents are making me a Grandmother.
Having said that I welcome our new addition to the family in February next year with anxious happiness.
Congratulations to both of you on your new journey of parenting ahead wishing you both a very happy life together and a healthy future for the baby.
The broth is so flavorful, between the vegetables and herbs, I almost want to use this as soup.
It really is one of the most comforting foods I have ever made, of course, I had to do an Italian twist on this Southern favorite!
I add what my family likes for vegetables.
Some suggestions I have are mushrooms, green peppers. onions, corn, peas, green beans, potatoes, carrots, celery all diced in small pieces so they cook faster.
I am sure you can add mixed vegetables or anything else you prefer.
We like a little heat so I like to add cayenne pepper to mine.
I never add onions because I am allergic, however, I add a lot of extra garlic!
I also like to add some grated cheese, herbs, and garlic to my dumpling dough!
Growing up all Italian, I had no clue what this dish was. To my surprise, she loved how I made them.
I was thrilled to make something this new mama was craving and liked!
You can roast the chicken in the oven or saute it on the stove.
For a real money saver, add water to the sauteed chicken and make your own chicken broth instead of buying it!
Saute the chicken in some butter and olive oil until browned on both sides, then add the 6 quarts of water to the pan.
Just season it with salt, pepper, and the vegetables will give it all the rest of its amazing flavors!

Biscuits and gravy are a staple in the South. This is bursting with flavors and the dumplings are soft, fluffy and tender.
The gravy and vegetables are almost like eating a pot pie in a bowl!
This is really an easy recipe.

Chicken and Dumplings Italian Style

This the most delicious comfort food ever! I created a little flair to this classic chicken and dumplings with a kick of Italian spices in the chicken. One taste and you'll be hooked on this awesome gravy with these pillow-soft dumplings.
ingredients:
- First Flavor the Chicken:
- 5 boneless chicken breasts
- 2 tablespoons minced garlic
- garlic powder
- 2 tablespoons chopped fresh parsley
- 2 tablespoons fresh rosemary
- 1/2 teaspoon oregano dried
- 4 leaves fresh basil chopped
- salt pepper to taste
- 1/4 cup olive oil
instructions:
How to cook Chicken and Dumplings Italian Style
- Prepare the Chicken:
- Place the chicken breasts on a cookie sheet greased and sprinkle with garlic powder evenly and all the above mixed together, drizzling the olive oil over each piece. Bake for around 45 minutes on 350 or until no longer pink in the middle.
- Cool. Slice into cubed size pieces set aside.
- Make the Dumplings:
- 2 cups flour
- 1 tablespoon baking powder
- 1 teaspoon salt
- 2 eggs
- 3/4 cup half and half or whole milk
- 1 teaspoon each garlic powder, parsley
- 1/2 teaspoon black pepper
- Optional: 1/4 grated Romano cheese
- pinch of cayenne powder
- Mix the dry ingredients and herbs in one bowl and the wet ingredients in another. Pour the wet ingredients into the dry just until moistened and all comes together. Cover dough with a wet towel and set aside.
- Dumpling Sauce:
- In a large saucepan add:
- 6 cups chicken broth
- 1 cup diced carrots
- 1/4 cup chopped celery
- 2 medium-sized potatoes diced or more to family size
- (optional) 8 oz. mushroom slices, peas, corn or any other kind of vegetable you like
- 3 minced garlic cloves
- 2 tablespoons sherry (secret ingredient)
- 1/4 cup heavy cream
- 6 tablespoons flour
- 1 or 2 fresh basil leaves chopped
- 3 tablespoons butter
- 1 tablespoon olive oil
- In saucepan melt butter, add the oil. Sauté the garlic and vegetables for around 2 minutes. Add the flour and stir. Pour the chicken broth in this vegetable mixture. Add the sherry. Simmer 15 to 20 minutes until the vegetables are soft then add the heavy cream. Fold in chicken. Let that come to a slow simmer.
- Add the dumpling mixture around 2 tablespoons and cook until they are light and puffy around 15 minutes. For thicker sauce continue cooking until liquid boils away.
- Note: all vegetables are diced very small or sliced fine and thin.
