Mini Cupcake Cheesecake Bites
These are all over the net, we have made them since I was a teenager and we won't say how many moons ago that way!
I had this written down and somehow forgot about on how sometimes the simplicity is best. Nothing better to bring along to a party or serve on your favorite night watching that family movie or sports event! Even the kids can make these easy treats!
I use two cookies on the bottom but you can use one if you like, I found that using just one always browns way too much. This is such a versatile recipe, you can add any toppings your like. Chocolate chips, any fruit like fresh blueberries, strawberries or chopped peaches. Nutella with chopped hazelnuts or even Macadamia nuts with coconut and caramel ice cream topping. There are endless possibilities! Hope you find a favorite you like!

Mini Cupcake Cheesecake Bites
instructions:
2 packages 8oz each of cream cheese softened
2 eggs
1 tablespoon pure vanilla extract
1/2 cup sugar plus 1 tablespoon
1 box vanilla wafers
Garnish topping suggestions:
Any canned pie fillings
Any canned fruits
Any fresh fruits
1 bottle of fudge ice cream topping or jams any flavors
1 bottle of strawberry, caramel, pineapple or cherry ice cream topping or jams any flavors
Prepare cupcake tins. Add paper liners to cupcake tins. Put wafers in each paper cup, I usually double stack them. Set aside.
In a separate bowl mix cream cheese, eggs, sugar and flavoring and beat till smooth and creamy no lumps.
Using a gravy ladle to spoon batter onto wafers. Bake at 350 degree oven, till the center is solid around 25 to 30 minutes. Cool completely. Top with a teaspoon of topping of choice.
