Mom's Homemade Italian Sausage Patties

When I was growing up, my mom had a business. Downtown in Utica, New York where she made everything Italian from scratch.


After I was born, she moved the business to our home and made everything in the front room, I don't remember much but I do remember my favorite meat as a child was here homemade sausage patties.


Several years later, I learned how to make it, watched her and still it's not exactly like hers, I think the meats we buy today taste different than in the 1960s.


This sausage is still delicious and easy to make and my kids love it.


With some additions added like peppers, onions if you like and even slices of tomato, you can have a sausage meal all in one pan.


We sometimes even add potatoes to this sausage pattie meal.


Baked, fried, grilled or however you like sausage this recipe will surely put a smile on any Italian sausage lovers face!


Mom used to make the best sausage from scratch.


She would make links, patties, skewers and even keep some loose for sausage rolls!

I just love my mom's recipe!





There is nothing hard to mixing up some ingredients and this is one of those recipes I make often.


Homemade sausage is something my mom did all her life, and I now carry that tradition.


Mixing the ground pork together with some herbs, spices, cheese and sometimes wine makes it super tasty.

I would watch mom and my dad make the sausage using the funnel tubes and it was always quite interesting to see how if all came together.


Being mom was in business, she made everything homemade from scratch and her sausage was my favorite!

Back in 1950, it was not common for a woman to work.


My mom always did.


I will always cherish the pride she took in cooking everything from scratch and her love for the kitchen.


Everything was a banquet and beyond words delicious.


She made the simplest meals over the top fantastic.

Grandma


As I grew up, my grandmother watched me and she went on to run a deli in a large supermarket.


Grandma was a great cook too and would always be teaching me something in the kitchen, mostly homemade pasta.


Being mom had her own business she would make all kinds of baked macaroni to sell.


She made hoagies with homemade sausage into patties to sell in sandwiches with peppers, many styles of pizza's, these are just some of the menu items.



It will spoil you from ever buying this again. I love to make homemade sausage in patties or skewers for the grill they are great!

I Miss Mom's Cooking Everyday



I love making mom's recipes, it keeps her memory alive, but boy do I miss her.



They truly loved Italian food, were very creative and always knew that right flavors to add. They instilled traditions for life in all of us.


I will always be cooking in their memory to keep it alive.

The Sausage Recipe is Adapted



This is one recipe I have adapted over the years.


She made sausage in bulk for a business and I had to cut this way down.


Mom initially made 25 pounds at a time for her business.


I love the taste of this, just make sure you mix a little of the pork shoulder with ground pork, sausage needs fat.


I use both but you can use all ground pork shoulder as she did.

Mom's Italian Sausage Patties

This is a recipe for Italian sausage patties homemade. The recipe is over 80 years old and mom used to make it from scratch. This is adapted from her bulk sized recipe to make sausage patties grilled, baked or fried.

ingredients:

  • 2 to 3 lbs. of ground pork mixed with fat (I usually use a pork shoulder or butt ground)
  • 1 tablespoon fennel seed
  • 2 tablespoons paprika
  • 2 teaspoons minced garlic
  • 1 tablespoon olive oil
  • 1 teaspoon or more of salt and pepper
  • 2 tablespoons red or white wine or  broth any kind
  • 3 tablespoons grated cheese
  • 2 tablespoons Italian seasoned bread crumbs
  • parsley fresh chopped around 2 teaspoons
  • For sweet sausage use the above recipe and omit the cayenne pepper
  • For hot sausage add 1/2 teaspoon of ground cayenne pepper per pound.

How to cook Mom's Italian Sausage Patties

  1. Mix the ground pork in a bowl with all ingredients shape into whatever you want, loaves, patties. 
  2. Fry on medium heat, bake or grill. 
  3. You can also bake at 400-degree hot oven until browned placing them on parchment paper or a greased pan for around 30 minutes or until browned and starts to look crispy on the outside. Add potatoes, onions, peppers and whatever else you like for one pan meal.
  4.  If making skewer, just use prepared kebab sticks and thread the meat onto them.
  5.  Grill until browned. If you would like them baked or fried, shape into little loaves, cook them then thread on skewers.
  6. Note: You can also Air Fry the sausage.
