Mini Pizza Zucchini Bites
prep time: 10 min cook time: 20 min total time: 30 mins
A little appetizer with loads of flavor just like pizza using zucchini slices
ingredients:
- Zucchini cut into 2 inch thick slices
- Any kind of tomato sauce
- Shredded mozzarella cheese
- Grated Cheese
- salt, pepper
- Dried or freshly chopped oregano, basil, parsley
- Cooking spray oil or olive oil
- Aluminum foil
- Optional: pepperoni chopped, loose cooked sausage, sliced mushrooms, chopped pepper or any kind of vegetables or meats chopped
instructions:
- Wash and slice the zucchini into thick 2 to 3-inch slices
- Place foil on a cookie sheet and spray it with cooking oil.
- Place the cut zucchini on the foil.
- Spoon a tablespoon or more tomato sauce on each piece of sliced zucchini.
- Add any kinds of meats you prefer on top.
- Sprinkle with grated cheese and all seasonings evenly over the tops of each one.
- Top each one with mozzarella cheese.
- Spray the tops with more cooking oil spray.
- Bake at 400 degrees until the cheese browns around 20 to 25 minutes.
