Chicken Thighs with Herbs and Peppers Recipe

prep time: 10 minscook time: 45 minstotal time: 55 mins

ingredients:

6 to 8 Chicken Thighs bone in

3 tablespoons Fresh Italian Parsley Chopped 

1 sprig Fresh Rosemary

2 Chopped Green Peppers

1 tablespoon Fresh Chopped Basil

2 teaspoons Freshly Minced Garlic

1/2 teaspoon Dried Oregano

Olive Oil to drizzle

1/2 cup Italian Bread Crumbs with 2 tablespoons added Parmesan cheese

Salt, Pepper to taste

Optional: 1/2 teaspoon smoked paprika, a pinch of cayenne


instructions:

In a large baking pan, place the chicken in one even layer. I used a 13 x 9 pan.

Drizzle lightly with olive oil. Sprinkle with bread crumbs. Evenly top with rosemary leaves, chopped peppers, basil, parsley, garlic,  oregano, salt and pepper. Bake in a preheated oven at 350 for around 1 hour until the chicken is crisp and browned. May take longer depending on the thickness. Chicken is done when juices run clear.
