I will be hosting the September edition of No Croutons Required. As the summer nears to an end and the cooler temperatures begin to set in, my thoughts go toward warmer climates. I've decided the challenge this month is to make a Mediterranean soup or salad. Please recall that this is a vegetarian event, so eggs and cheese are great, but no beef, fish or chicken.
