MASAK LEMAK TEMPOYAK IKAN
INGREDIENTS
1 whole pomfret slice into pieces / 1 ekor bawal dipotong buat gulai
10 mini star fruits / 10 biji belimbing buluh
2 turmeric leaves - torn / 2 helai daun kunyit di siat
3 lemongrass crushed / 3 batang serai dititik
3 tbsp fermented durian / 3 sdb tempoyak
1 cup water / 1 cawan air
salts to taste / Garam secukup rasa
Ingredient to be pounded
25 bird;s eyes chilies / 25 cili padi
5 shallots / 5 biji bawang merah
3 cloves garlic/ 3 ulas bawang putih
2" turmeric roots/ 2" kunyit hidup.
Blend all ingredients into wet paste and set aside / Blend sehingga halus dan letak sebelah
PREPARATIONS
- Bring to boil the pounded wet paste with 1 cup of water./ Masukkan bahan blend dan secawan air. Renehkan
- Add cushed lemongrass and turmeric leaves./ Masukkan juga serai dan daun kunyit
- Once boiled add in coconut milk and fish. Stir constantly so that coconut milk won't curdle./ Bila sudah didih, masukkan ikan dan santan pekat. kacau supaya santan tidak bergentel
- Add tempoyak and salts to taste. Simmer on low heat until fish are done./ Masukkan tempoyak dan garam secukup rasa. Perlahankan api dan biarkan sehingga ikan masak
- Finally add in mini star fruits / Akhir sekali masukkan belimbing buluh.
- Remove from heat and ready to serve / Padamkan api dan sedia dihidang.
