Italian Pork Tenderloin Stir Fry Recipe
Here is the best pork tenderloin stir fry you will ever eat in my opinion. Slow cooked on top of the stove it's just a perfect mouth watering meal. I like to serve mine with jasmine rice but you can serve this over pasta, rice or even mashed potatoes!
Anyway you decide to serve this you're in for a treat!
Italian Pork Tenderloin Stir Fry Recipe
2 to 3 pounds pork tenderloin sliced in cubes
2 or 3 bell peppers sliced and cleaned
8 ounces fresh sliced baby bella mushrooms
Pinot Grigio wine
olive oil
3 cloves minced garlic
1 teaspoon each granulated garlic, dried parsley, salt and pepper
dash or red pepper flakes or pinch of cayenne
Options:
cooked rice, mashed potatoes or buttered pasta
In a large fry pan, heat the oil around 4 tablespoons on medium heat. Stir fry the cubes of pork in the oil and add the garlic. Add mushrooms, peppers and a 1/2 cup wine, simmer on low heat until the pork is soft and tender around 35 minutes, piercing with a fork to see if it falls apart with tenderness. Serve over cooked rice, mashed potatoes or aglio pasta.
