Florida Orange Cranberry Walnut Bread


Very flavorful, everyone loves this with tea or coffee! I have made several kinds of cranberry breads, this one is my favorite by far, it travels well!  It's a common quick bread here in Florida and they sell this at our local farmers market, it flies off the shelves!

This cranberry bread is  very dense, an extremely thick batter, a little tart and just perfect for gift giving.

 2 cups all-purpose flour
1 cup sugar
1 1/2 teaspoons baking powder
1 teaspoon baking soda
1/2 teaspoon salt
1/2 teaspoon cinnamon
1 egg
1/2 cup orange juice
Grated peel of 1 orange
2 tablespoons melted butter or margarine
2 tablespoons hot coffee
1 cup fresh or frozen cranberries coarsely chopped
1 cup coarsely chopped  nuts,  pecans, walnuts or macadamia, or a combo of all three (that's what I do)
Mix all dry ingredients in a bowl. In another bowl mix all wet ingredients together, gently fold into batter just till moistened.
Fold in nuts and cranberries. Grease foil lined loaf pans 4 mini or 2 large or your choice of greased pans. pour into pans.
Bake on 325 degree preheated oven for 60 minutes or until toothpick comes out clean.
