Zucchini Tomato Tart
What better way to use fresh tomatoes than with this healthy delicious baked zucchini tomato tart?
It's great for breakfast, brunch or lunch.
Add some grilled chicken or meat and this also makes a great side dish.
This tart really goes with anything and anytime.
We really love it as it is light for the summer months and since we have a beautiful garden and grow our own tomatoes and zucchini this is a win-win to enjoy the fruits of our labor!
When you serve this to friends and family, don't be surprised they think it took all day for you to do and more gourmet than just a usual tart to serve.
You can make this elegant and serve it on a bed of fresh lettuce greens if you really want to wow your family or guests.

This tart is baked with a delicious cream egg mixture and filled with the taste of summer vegetables.

- Pie crust shell to fit a tart pan (use pie dough, tart dough or puff pastry ) store-bought or homemade
- eggs
- sliced or shredded zucchini
- sliced plum tomatoes
- shredded mozzarella
- Parmesan cheese extra for topping
- granulated garlic or fresh minced garlic
- olive oil
- half and half or whole milk ( you can use 1% also for dieters)
- fresh basil leaves chopped
- salt, pepper, and cayenne to taste
Tips
- Cutting calories? This bakes perfectly crustless.
- Use 2 % milk for less fat
- You can use all egg whites if watching cholesterol
- For meat eaters add any chopped cooked meats you like
- Topping with fresh basil and using mozzarella or provolone is the perfect Caprese quiche style tart
- For easy tart removal, use a tart pan that has a separate bottom plate much like a springform pan found in specialty baking store.
- Don't forget to use oil spray on your tart pan

A delicious fresh tomato and zucchini summer tart baked to perfection and great as it is or used for an appetizer or side dish
ingredients:
- 1 - Pie crust shell to fit a tart pan (usepie dough, tart doughor
- or puff pastry ) store-bought or homemade
- 2 eggs
- 2 cups sliced or shredded zucchini
- 2 thinly sliced plum tomatoes
- 1 cup shredded mozzarella
- 1/2 cup Parmesan cheese extra for topping
- 1 teaspoon granulated garlic or fresh minced garlic
- olive oil and cooking oil spray for the pan
- 1 cup half and half or whole milk ( you can use 1% also for dieters)
- 3 or 4 fresh basil leaves chopped
- salt, pepper, and cayenne to taste
- Optional Garnish Italian flavored bread crumbs
- Optional additions or substitutions: sliced mushroom, sliced eggplant, sliced onions, chopped broccoli, chopped spinach, broccoli rabe or cauliflower can be used instead of or mixed to 2 cups of vegetable medley. You can make the basic recipe and use any of the above listed.

How to cook Zucchini Tomato Tart
- Preheat oven to 375 degrees. Grease the tart pan and line with dough.
- Place the zucchini in a medium-sized bowl adding all ingredient except tomatoes and blend all together. Pour into the tart pan.
- Place sliced tomatoes on top If using add the bread crumbs on top of the tomatoes. Add more Parmesan, drizzle with olive oil. Salt, pepper and granulated garlic just on the tomatoes for flavor.
- Bake tart until the middle is set at 375 degrees around 45 minutes to 1 hour.
