Rocky Road Brownie Cupcakes

Brownies are sometimes a way to a man's heart? Haven't met many of them that didn't love brownies. Sitting here thinking what to do to make these for my sweetheart. I like to make this recipe for any holiday and changing the coloring that matches the theme. I use Valentines Day this time for these with red sprinkles, turned out exactly how I hoped for. How simple it is to make, and of course no way was he waiting, he ate two before they were cooled! You can create any kind of Rocky Road, using any kind of nuts, even colored miniature marshmallows, or colored chocolate. I especially like the red and white striped chocolates for Christmas when available, or the green and white chocolate chips, striped for St. Patrick's Day. Use your imagination and this one is simple to be creative.

Simple heart shaped paper cups make this a perfect dessert for my favorite Valentine.

It's a simple recipe for brownies, the last thing you do is put on the topping after these are baked.

As soon as they come out of the over add the topping, pop them back into the hot oven for just a few more minutes, to soften, not cook.

Love the combo of semi sweet chocolate chunks, peanuts and marshmallows.

Fill the batter into your favorite paper cups, brownies have never been so easy, no cutting!

Of course the butter and unsweetened chocolate make this scratch brownie the most tender and delicious over boxed brands any day of the week!

Basic Recipe for Brownies:

2 sticks of butter
2 cups of sugar
2 teaspoon pure vanilla
4 eggs
4 1 ounce squares of unsweetened chocolate melted and cooled
1 cup of flour

In a mixing bowl beat sugar and vanilla, add eggs. Blend in chocolate. Stir in flour. Spoon into paper lined cupcakes tins and bake at 350 for 25 minutes or till the middle doesn't look moist.

Take out of oven, add to each cupcakes spoonfuls of the following mixed ingredients:

Topping: Add as much as you like!
2 cups of miniature marshmallows
1 cup of semi sweet chocolate chunks
1 cup salted peanuts
Mix in a bowl together the above three ingredients.

You will need colored sugar of your choice for your holiday theme and that's the last thing you add on top but do not mix in the bowl.

After spooning on top of each cupcake, put back into hot oven for 5 minutes till topping softens and this will set ingredients together. Remove from oven. Let cool. You can sprinkle with coordinating colored sugars according to the holiday. Green for St. Patrick's Day, Red for Valentines Day, etc.
