I couldn't wait for this dessert to be ready!

Big Dessert Here in the South



This is on many restaurant's menus, here in the South.


Mom used to make this often when I was a child even in New York!


We never used anything but homemade pantry ingredients.


Mom even used to take the cream off the top of our milk.


We had our milk delivered back in the 1960s and she would make the cream from it.


Of course, those days are gone, but you can certainly whip up some fresh cream from your local dairy.


This pudding is so smooth and creamy and the whipped cream and nilla wafers is that perfect bite on your spoon!

Keep in mind when you do make this it needs to be refrigerated.


During the summer, we would pack this in a cooler on ice.

We found this recipe to be not only a family favorite but a great take along to any party or event we had.


If you're not a big fan of bananas, you can certainly get creative and change it up.


I love to use fresh peaches on occasion, with my creamy pudding and still using this method, just for a change.


My family isn't a fan of peaches but I love it!


I usually stick to this classic style recipe.

Tips




  1. You will need to add a hot liquid to an egg mixture. If you just combine the two mixtures, you'll end up with cooked eggs in your sauce. The goal here is to slowly bring up the temperature of the eggs without scrambling them.
  2. Chill your bowl and beaters first before whipping the cream.
  3. Layer evenly by alternating the pudding, cream and wafers.

Old Fashioned Banana Pudding

This is an old fashioned classic dessert called banana pudding. It's popular here in the South and made from scratch. One of my favorite memories mom made as a child and I carried that traditional dessert on still today, it's so easy to make!

ingredients:

3/4 cup sugar 
3 cups whole milk
1/4 cup cornstarch
5 egg yolks
1/4 teaspoon salt
2 teaspoons vanilla extract
1 tablespoon butter
4 peeled and sliced bananas
lemon juice
1 box of vanilla wafers
1 pint of whipping cream or more whipped

instructions:

In a pie plate, slice the bananas, drizzle with lemon juice and set aside. Whip the cream with 3 tablespoon sugar until soft peaks,  place in the refrigerator.
Make the Pudding recipe: 
In a nonstick 1-quart saucepan, combine 3/4 cup sugar, 1 cup milk. Scald mixture. In a small mixing bowl, whisk the remaining 2 cups milk and cornstarch together to make a slurry. Whisk egg yolks with salt in a medium bowl. Temper yolks by adding 1/2 cup scalded milk mixture to yolks and whisk well. Add yolk mixture and put back into milk mixture and whisk vigorously over medium heat until thickened, about 2 minutes. Remove from heat, add vanilla, and butter. Whisk until uniformly incorporated. 
In a glass bowl or see-through baking glass rectangular pan, layer the wafers, pudding, sliced bananas then whipped cream. Repeat layers until you use everything up, ending with the whipped cream. Refrigerate until ready to serve.
