Roasted Beets Salads and Healthy Weight Loss

Roasted beets are so easy to make and sweet addition to any salad.


These salads are a staple in my dietary health every day.


Of course, I change them up with different vegetables, beans, and roasted delicious beets are the main ingredients to a healthy delicious weight loss.


Check out these fabulous salads that made me lose 30 pounds in 5 months without feeling hungry.

Roasting beets are easy, as I will show you in the video and add the recipe I use.



The salads are made to order by you! They will always be what you like to add. I have no meat added to the salads I ate, however, some of the beans were the protein additions.


Beets have the highest sugar content of any vegetable so should be eaten in moderation.

Moderation



I have one or two slices on my salad a day. You have to be very careful with overeating on beans, most contain carbs that turn into sugar and then into fat.


I try to stick to green beans but my love for chickpeas and snap peas keep me eating them in moderation.


I will give you suggestions and alternatives but as a rule, you can eat as many vegetables that you want to fill up on and use the one you love to eat.

You can find fresh beets in the produce section at the supermarket.


Usually, they come in a bunch. They are easy to grow in warmer climates. Beet is known for lowing blood pressure.


My blood pressure was 150 over 110 a year ago.

Some Great Results



Eating beets daily in moderation, walking exercise and healthy no carb, virtually no meat diet, I am now at 119 over 70 with my Blood Pressure.



Beets are also known for increasing stamina, warding off certain cancers and the nutrients and vitamins are good for bones, kidneys, liver, and pancreas.


I'm not a doctor or giving advice, just what worked for me.

Ready For the Oven



The skin of these beets will peel right off after roasting.


I clean and scrub them under hot water, cut off the tops and save, drizzle with olive oil and season.

Beet Greens



The tops of the beets greens actually have more iron than spinach.


Beets are rich in Vitamin A, C, calcium and can ward off osteoporosis.


I have osteoporosis and one of the reasons why I am a big fan of beets and the leafy tops!

The Sweetest Vegetable On Earth



Beets have natural sugar, they are the sweetest vegetable on earth.


Therefore, still eat them in moderation, although a vegetable, eat them as a treat.

Love Freshly Grown Vegetables!



I am very fortunate to be able to grow many of my own vegetables living in Florida and love gardening.


Beets are a root vegetable that grows under the ground and very easy to grow.


They can be red or yellow, I love both.


They are also very inexpensive to buy fresh. Roasted is my favorite way to eat these beets and they are always soft, sweet and delicious every time.



The beet greens can just be washed, chopped and added to the salad.

Change it up



Eating salads can become boring if you don't keep it spiced up and change them up!


I like to add feta cheese or even blue cheese to change it up a bit, but too much because of the salt content.


This is my version of a greek salad. There are peppers, beets, greens, cucumbers, greek sauce, chickpeas just a little different style salad with a big bold taste.








Eating Beets and Healthy Vegetables



When I started my diet it was very hard. Being Italian, I love my pasta, pizza, meatballs and weight gaining foods. Lots of carbs.


They slowed me down a lot. Moderation is key however carbs really do pack on the pounds quickly and even in moderation,

I Really Love Yellow Beets!




I can't find yellow beets all the time but they are my first choice.


I had a problem with cholesterol and high blood pressure.


That's what the turning point of cutting carbs and meats out was for me.


I am now off all medication. It may not be for everyone, but with my diet and daily walking to keep fit, it worked for me.

Stay On Track



It's not easy, but if you eat healthily and keep things exciting by changing it up a little, you will stay on track.


Change is good, salad can get boring I get that!

Stay Motivated




It's a way of life now. It's not an easy task. Of course, you still crave the foods you love.



You need to always set one day aside to treat yourself. When I reached my goal, I went right for the pizza.



Not overdoing it, one slice. You can add things as a treat once a week but only when you reached that goal weight.

Easy Weight Loss



This diet will always be constant maintenance. You will learn what foods you can add not to gain your weight back with portion control.



Roasted beets and salad helped me with my weight loss. I did add salmon and shrimp to the salads once a week. I never ate meats in those 5 months.



I would count calories that went into that salad when adding cheese, beans, and fish also.

Slow Weight Loss



Everyone is different on how many calories they need in my case I stuck to 700 calories and lost 1 pound and sometimes more a week.



It was slow going in the beginning. When I started seeing results I got excited and motivated even more.



The best feeling was getting back into pants I hadn't worn in 5 years!

Delicious and Easy




Roasted Beets Salads and Healthy Weight Loss is a way of life for me now.



Motivations, determination and serious dedication to eating healthy is key to the success of your weight loss.



I will give you a cookie cutter idea of what I ate daily. You will have to adjust to your individual body size on how the quantity of food is.



Eating more greens than the additions is a must.



Don't load up on cheese or beans, add more arugula, spinach. Limit to one avocado a day or half of one.

Avocado Is A Great Addition



Avocado is another fabulous addition to healthy eating. I also use a very good grade of 18 years aged balsamic vinegar and my extra virgin olive oil is cold pressed.



You may ask what else did I eat! Here is breakfast, I ate half a cantaloupe filled with banana and watermelon or other fruit like blueberry, pineapple, always all fresh.



For lunch and dinner, I had salads a little different and added one with avocado then at dinner, I would have top one with grilled shrimp.



Snacks would be air-popped popcorn, celery, carrots or rice cakes. Let's get started with that new you in a delicious journey!

Roasted Beets Salads and Healthy Weight Loss

ingredients:

Daily Salad Recipe Suggestions
Roasted Beet recipe see below eat 3 to 4 slices on your salad
Hearts of Palm drained and rinsed
Any kind of tomatoes fresh chopped in small pieces no limit
Cucumbers as many as you can eat
Chopped red cabbage as much as you can eat
Sliced olives 1 teaspoon
Shredded carrots 1 tablespoon per salad
Snap peas 1/2 cup
Chickpeas 1/4 cup
Romaine, Spinach, Beet Greens, Arugula, or any kind of mixed greens or lettuce no limit
Artichoke Hearts canned drained no limit
Fresh corn on the cob 1 ear cooked and shucked
Chopped celery no limit
Cheese in moderation preferably mozzarella or feta 2 tablespoons
Any kind of peppers no limit
Optional: grilled shrimp, salmon, tuna or any seafood you prefer
Raw chopped broccoli, cauliflower, zucchini, butternut cooked squash no limit
Balsamic Vinegar 2 tablespoons
 Olive oil 2 tablespoons 
any herbs and spices you like

instructions:

Roasted Beets Recipes
Cut the beet tops off and save for salad. Cut the bottom off the beet. Wash the beets very well.
Leave skins on. Rub them with olive oil. Salt, pepper and granulated garlic on them evenly. Wrap in foil. Bake the beets for around 2 hours at 350 degrees until fork tender. Cool, peel the skin off, (it will come off easy) and slice beets thinly. Refrigerator any beets in a zip lock bag.

Serve on top of greens of choice and any or all the vegetables listed of choice with above suggestions. Add cheese on top and fish if using. 
Drizzle with balsamic vinegar, extra virgin olive oil and any seasonings your prefer.
