Barbecue Pizza Bites

We eat lots of ground beef, but I get sick of burgers and tacos! Have had this recipe marked to try for a while, decided to make it today while my DH enjoyed another favorite recipe (Tortilla Pie).

Excellent! My beef got a little crisp, probably because I had it on the top oven rack because the Tortilla pie was in the middle.

Would make great appetizers, or a nice entree with a salad, which is how I had it!


Barbecue Pizza Bites


Amount Measure Ingredient -- Preparation Method

1/2 pound ground round (I used 97%)
1/2 cup chopped onion
1/2 cup chopped carrot
1/3 cup barbecue sauce (I used Kraft Honey BBQ)
3 tablespoons brown sugar
1/4 teaspoon salt
1 Dash black pepper
4 Italian pizza crusts (such as Boboli) -- (4-ounce)
1/4 cup finely shredded provolone or part-skim mozzarella cheese -- (1 ounce) (I used the mozzarella)
2 tablespoons chopped fresh cilantro (used Penzey's dried)

Preheat oven to 450°.
Cook beef, onion, and carrot in a large nonstick skillet over medium-high heat until browned, stirring to crumble. Drain well; return meat mixture to pan. Stir in barbecue sauce, sugar, salt, and pepper; reduce heat, and simmer 5 minutes.
Place pizza crusts on a baking sheet. Divide beef mixture evenly among crusts, and sprinkle with cheese. Bake pizzas at 450° for 12 minutes or until cheese melts. Sprinkle pizzas with cilantro. Cut each pizza into 4 wedges. Yield: 16 servings (serving size: 1 wedge)
