Blueberry Granola Bars
(originally made 7/2008)
Made these as a test run yesterday to see if they'd be good for our camping trip. I'm not sure if my blueberries were just too big, but there didn't seem to be enough "dough" to cover the berries. The ones that did hold together tasted delicious, but I'm not sure I'd make them again.
**Edited to add that after they'd set overnight they held together much better. Will definitely give them another try, maybe cutting back the blueberries just a bit.

1/2 cup honey
1/4 cup firmly-packed brown sugar
3 tablespoons vegetable oil
1 1/2 teaspoons ground cinnamon
1 1/2 cups quick-cooking oats
2 cups fresh blueberries

In a large mixing bowl, combine oats and blueberries. Stir in honey mixture until thoroughly blended. Spread into prepared pan, gently pressing mixture flat. Bake until lightly browned, about 40 minutes. Cool completely in the pan on a wire rack. Cut into 1 1/2 × 3-inch bars.
