Boston Cream Cupcakes~ the cheater's version!

After a week of gingerbread men (150+ iced), and a week of baking orders, I still had to produce some delicious desserts for 2 family gatherings. I wanted to keep the desserts easy to portion this year, so that people could have a little of each without guilt. I already had a chocolate trifle, and Lemon Meringue Pie cupcakes, so I wanted something a little different.
I just did not have time to make the cake from scratch, I used a prepared cake mix (yellow, Betty Crocker) baked as cupcakes according to the directions on the box. I used cook & serve vanilla pudding with some scrapings from a vanilla bean added. I made the ganache from 8 oz semi sweet chocolate that I melted in 1 cup of heavy cream that I brought to a boil. They were a huge hit. Will definitely give them a try again, and used Gale Gand's Boston Cream Pie recipe.
