Tortellini and Marinara Sauce
(originally made 1/2006)
Found this in Cooking Light's 5 Star recipes. Quick and easy. I only made one pkg of pasta, and will use the left over sauce for mini pizzas tomorrow. Definitely a keeper in our house!
*I used the Barilla Three Cheese Tortellini (available with the boxed pasta)
*I used basil, oregano and some crushed red pepper to taste instead of the italian seasoning
Tortellini with Marinara Sauce
Amount Measure Ingredient -- Preparation Method

cooking spray
1 teaspoon olive oil
3/4 cup chopped onion
2 cloves garlic -- minced
28 ounces crushed tomatoes -- drained
2 teaspoons italian seasoning
1/2 teaspoon sugar
1/4 teaspoon salt
2 packages refrigerated cheese tortellini -- (9 oz each)
1/4 cup grated parmesan cheese
Coat a large saucepan with cooking spray. Add oil, and place over medium-high heat until hot. Add onion and garlic; cook, stirring constantly until tender, about 4 mins. Add tomatoes, italian seasoning, sugar and salt. Bring to a boil, reduce heat to low, and simmer 20 mins, stirring occasionally. Cook pasta according to package directions, omitting salt and fat if called for. Drain.
To serve: place 1 cup pasta in each serving bowl, top with 1/2c sauce. Sprinkle servings equally with Parmesan.
NOTES : 7 points per serving (WW)
Per serving: Calories 323 Fat 6.7g Fiber 1.1g
