Optional: 1 cup chocolate chips ( I had some many candy bars leftover from Halloween I just cut up and did chunks of chocolate in these)
1 teaspoon cinnamon
1/4 teaspoon allspice or pumpkin pie spice
Frosting:
canned cream cheese frosting
(If you like walnuts or prefer raisins to chocolate this an alternative as well)
Preheat oven to 350 degrees. Parchment lined cookie sheets.
In a large bowl, stir together the cake mix, egg. spices and pumpkin until well blended. Drop by rounded spoonfuls or a melon ball scooper onto the prepared cookie sheet.
Bake for 18 to 20 minutes in the preheated oven. Allow cookies to cool on baking sheet for 5 minutes before removing to a wire rack to cool completely. Frost with canned cream cheese frosting.
For homemade frosting:
2 cups powdered sugar
1/4 cup Whipped cream cheese
Heavy cream to make a medium thickness
Mix until desired thickness adding more cream for thinner frosting.
