Baked Coconut Chicken with Pineapple Sauce

I saw this recipe on Pinterest and knew it would be perfect for the challenge :) I didn't feel like chopping up the chicken, so I left it whole and increased the baking time to 28 mins. Only had a lemon on hand so subbed it for the lime. Big hit here. I'm not normally a fan of curry powder, but it was ok in this. A bag of 90 sec rice and steam in bag green beans and we were set!
