Peanut Butter Banana Stuffed French Toast

I admit it. I don't usually make any kind of breakfast like this on a regular basis. I'm a total cereal girl. I could eat cereal every morning for months and not mind one bit. However, that doesn't mean I don't enjoy having a little somethin' som'm extra special for breakfast every once-in-a-while - especially if french toast is involved.

I love how easy your typical french toast can be: bread, egg, touch of milk. Simple. I usually add in a little vanilla, cinnamon, etc to add a little extra, but I've never really ventured beyond. This morning I knew I had all the ingredients for a Bobby Flay recipe I found (minus the Rum and OJ). I love Bobby Flay - I've never tried a recipe of his that I didn't love. Especially his burger recipes.

This recipe contains a few extra ingredients I wouldn't have grabbed first, but really loved how they tasted in the recipe: peanut butter, cayenne pepper, orange juice, and nutmeg. So DANG good, I'm tellin' ya. The peanut butter gets all gooey and warm and melts in your mouth with the bananas and maple syrup. The hint of cayenne with the nutmeg is perfect. It's just nuts.

I was at a loss this morning for OJ - but really wanted to find out how it tastes with it included. So, I improvised. I had a small can of mandarin oranges in 100% juice in my cupboard. In my mini-food processor it went, and out came delicious tangy orange(ish) juice.

Peanut Butter Banana Stuffed French Toast
(This recipe is for one serving. So multiply the recipe per person)

2 Slices of your favorite bread
1 Banana
Peanut butter

One whole egg whisked together
2 Tbsp juice from fresh orange or ready-made OJ
pinch of freshly grated nutmeg
pinch of cinnamon
pinch of cayenne


Make a sandwich with your peanut butter and banana.
Whisk egg mixture together. Dip both sides of sandwich in egg mixture.
Place sandwich in a heated iron skillet or non-stick that has had a small pat of butter melted. Allow to brown for 60 seconds or slightly longer on each side.

For the garnish:
Pour syrup and sprinkle powdered sugar.
