Slow Cooker Cilantro Lime Chicken
Want to make your house smell like a Mexican Restaurant? Want to go into a slow, deep, cilantro coma for an afternoon? Want to stare at your chicken in disbelief for a half hour that it could taste this good with such little effort?
I did. I WAY did.
I know I've already shared a cilantro-lime recipe this week, but I couldn't help myself. There's just something so fresh and fragrant with those little devils. It's intoxicating. I probably need to join a support group at this point.
This recipe is insanely easy. After trying out this recipe today, I regret each week I looked over my Pinterest board while making my grocery list and saying "eh, maybe next week..." FOOL! Fool, woman! I could have eaten this earlier, and enjoyed it earlier! It's a new favorite. The moist chicken can be so convincing.
Plus, I'm crazy about crock pot recipes - especially when they involve meat. We all know what happens to meat when it's been sitting in a crock pot for 6+ hours...
I served this up with Mexican rice, grated mozzarella cheese, and sliced avocado.

Slow Cooker Cilantro Lime Chicken
as seen on Pip & EbbyOne 24-ounce jar medium or mild salsa
4-6 boneless chicken breast halves
Juice from one lime
1/4 cup fresh cilantro, chopped
One 1.25-oz. package taco seasoning
2 jalapeno peppers, finely chopped (optional)
In a slow cooker, mix together all ingredients - except for the chicken.
After it's all mixed together, add your 4-6 boneless chicken breast halves (completely defrosted) to the slow cooker and coat with the salsa mixture. Cover and cook on Low for 6 hours.
Devour, and thank me later.
