Spicy lemongrass paste5 Fresh Lemongrass(use only the white part)25 Dried Red Chili(Reduce for lesser heat)1 1/2 inch of ginger root (i replaced with blue ginger)8 Cloves of garlic5 candlenuts1” turmeric root9 shallots3 kaffir leaves1/2 cup waterMethodRemove the outer part of lemongrass if it is dried or dirty, clean and slice the lemongrass, ground it together with all other ingredients mentioned into a paste.It is OK if the paste is a little coarseSpicy Lemongrass chicken2 tbsp Spicy Lemongrass Paste1 kg medium size shrimps1 cup coconut milk3 tbsp tamarind juice1/2 tsp Salt1/2 tsp Sugar/Palm Sugar5 tbsp cooking oilMethodHeat up a cooking pan, and turn the heat to medium, and cook the shrimps pieces oil, cover it if needed, until theit’s golden brown. Remove and drain oil.When the grease released is visible, stir in the lemongrass paste, and cook till fragrants stir well, an and add in coconut milk and water. Add in the tamarind juice and saltsBring it to boil and when the liquid reduced to the thickness of your liking, its done and in the friedshrimps
