UDANG MASAK SERAI



A very delicious shrimps recipe similar to the Malay rendang. Depending on your preference, you can add in bird's eyes chili if you want it hot. Very tasty and delicious. Perfect with rice



Udang Masak Serai




Ingredients

Spicy lemongrass paste
5 Fresh Lemongrassuse only the white part
25 Dried Red ChiliReduce for lesser heat
1 1/2 inch of ginger root (i replaced with blue ginger)
8 Cloves of garlic
5 candlenuts
1” turmeric root
9 shallots
3 kaffir leaves
1/2 cup water

Method
Remove the outer part of lemongrass if it is dried or dirty, clean and slice the lemongrass, ground it together with all other ingredients mentioned into a paste.
It is OK if the paste is a little coarse

Spicy Lemongrass chicken

2 tbsp Spicy Lemongrass Paste
1 kg medium size shrimps
1 cup coconut milk
3 tbsp tamarind juice
1/2 tsp Salt
1/2 tsp Sugar/Palm Sugar
5 tbsp cooking oil

Method
Heat up a cooking pan, and turn the heat to medium, and cook the shrimps pieces  oil, cover it if needed, until theit’s golden brown. Remove and drain oil.
When  the grease released is visible, stir in the lemongrass paste, and cook till fragrants  stir well, an and add in coconut milk and water.  Add in the tamarind juice and salts
Bring it to boil and when the liquid reduced to the thickness of your liking, its done and in the friedshrimps
